Lemon and Club Cracker cookie dough + Club Cracker buttery crunch = gooey, buttery heaven with a slight crunch

My best friend and I used to eat Club Crackers with butter spread on them for a super nutritious after-school snack when we were in middle school. I wanted to make a cookie inspired by that memory, but I added the extra pizzazz of lemony goodness.
